Use your cooling oven to cook bread; dry fruit, meringues and green wood
Again how long your fuel lasts in the Alfa depends upon how much wood you use on the fire. The Alfa ForninoxTM technology means these ovens are extremely well insulated and retain the heat for longer, therefore taking less fuel than a conventional brick oven. We cooked a 2.5kg (5lb 8oz) rib of beef with just one addition of more fuel. The extra fuel was placed in the oven opposite the lit logs so when the temperature started to dip they ignited almost immediately when they were added to the lit fuel.
Once the main meal is cooked and the fire is dying down this is the perfect time to cook bread with the door closed. Then when the bread is cooked and the temperature really low you can use this heat to dry out fruits and meringues. Once you have removed the lit embers this is the ideal time to dry out green wood with the door closed. Remember to store the dried wood somewhere dry.
