Fire up the BBQ in winter to cook plum pudding and brandy sauce
Why not put your GBS (Gourmet Barbecue System) wok with steamer to good use in winter by cooking your Christmas pudding on the BBQ. We cooked a 0.45kg (1lb) pudding in the Weber Genesis II LX gas BBQ; the disadvantage is that you cannot fit a 0.9kg 2lb pudding into the wok so if you need a large amount you will have to cook 2 or 3 smaller ones. Pre-heat the BBQ to a moderate heat and light the burner directly underneath the wok. Place some boiling water into the wok underneath the steamer; make sure you don’t let this boil dry. Place the pudding into the wok, put the lid on the wok and the lid down on the barbecue. Leave to cook for about an hour.
Brandy sauce
- 55g (1.94oz) butter
- 55g (1.94oz) plain flour
- 550ml (19.35fl oz) whole milk
- 55g (1.94oz) caster sugar
- 4 tbsp cognac
Cook the sauce on the side burner of the BBQ in a saucepan. Melt the butter over a low heat and beat in the flour to form a smooth paste. Gradually add the milk a spoonful at a time, beating well in-between additions. Once all the milk is incorporated add the sugar and simmer over a low heat for 5 minutes. Stir in the brandy and serve.
