How To Cook Banana, Toffee And Maple Syrup Pancakes On The Traeger Pro 22 Wood Fired Grill


Pancakes are a quick easy dessert to cook on the BBQ and so delicious

 Barbecues are not just for cooking meat, if you have a grill with a lid you can cook anything you would normally cook on the cooker indoors. These sweet pancakes are a delicious way to finish your barbecue, and a great crowd pleaser. All you need is a griddle, which are available to fit any gas, charcoal of wood pellet grill.

 

 Ingredients:

  • 1 large banana; mashed
  • 2 Dime bars; frozen and broken into small pieces
  • butter
  • maple syrup
  • raspberries
  • blackberries
  • Jersey ice cream (optional)

Batter:

  • 2 cups plain flour
  • 2 eggs
  • 2teasp baking powder
  • pinch salt
  • 1 – 2 cups milk
  • 2tbsp melted butter

Equipment:

  • griddle

To make the batter, combine all the dry ingredients and add the cooled melted butter and eggs. Beat until smooth and a fairly thick consistency, a bit like drop scones. Add the milk gradually until you have achieved this, they don’t want to be thin like ordinary pancakes. Stir in the mashed banana and the chips of Dime bar.

Pre-heat the Traeger and the griddle to 190C.

Butter the griddle and add a large serving spoon of the mixture; don’t spread it out too far. Cook for a couple of minutes until the underside is nicely browned; turn and cook the second side.

Serve with a dollop of Jersey ice cream or fresh whipped cream and drizzle with the maple syrup. Try substituting the bananas with fresh summer berries, pineapple or cooked apple.
